Quick, Simple and Tasty High Protein Low Carb Breakfast Egg Muffins

I don’t know about you although I never seem to have time for breakfast – or to make it. I’m simply not a great morning person. I’m trying to eat low carb while also cutting down on my calories in my never ending quest to lose weight. I may have finally found a simple solution to my morning rush and goal of eating a decent breakfast to start my day off well.
- 12 eggs
- 2 cups fresh spinach (chopped)
- 6 slices of lean thin-sliced deli ham (I used Kirkland brand from Costco) (diced)
- 1/2 cup of grated parmesan cheese
- 1/2 cup of sour cream
- and a bit of salt.
Mix well and carefully pour into a non-stick muffin tin (no muffin liners). Bake (for about 30 minutes at 400 in my old oven).
Once these cool they pop right out of the pan and I simply place them in a snap tight container and grab two or three each morning for breakfast. Simple, fast, inexpensive and TASTY! Best of all – only 115 calories each for high protein, super low carb breakfast on the go!
